Chef Toaki brings Michelin-level training and a refined culinary vision to Sushi Sho, having previously served as Head Sushi Chef at a Michelin one-star Japanese restaurant in Canada. His approach combines modern Edomae sushi with Japanese kaiseki technique, with a strong emphasis on ingredient quality, precise seasoning, temperature control, and balance.
Working alongside Chef Toaki is a skilled and diverse culinary team, each with extensive experience in Japanese kitchens. Together, they share a deep respect for tradition and a commitment to craftsmanship, ensuring consistency, discipline, and excellence at every stage of the omakase experience.
